Foraging for dinner

It's the week leading up to payday, and my kid hit me with "What's food?" as I walked in the door. No pressure or anything, lol!

I was expecting nothing in the fridge and got a pleasant shock; I'd completely forgotten than veggies have been really nice, local/Canadian, and cheap lately. So my crisper was nice and full for a change.

Checked the pantry-another score! Beef broth! Aha! A few minutes chopping, some spices and some frozen tortellini later, and we're having soup. Fits the bill-the kid is sick, so I can be extra motherly. Semi-homemade soup for the sickie.

Wish every dinner expedition would work out so smoothly.

It was good. Even the dogs approved- they love their veggies. It was also quick. About 5 minutes work and 20 minutes simmering. I like that kind of dinner.
